Coconut Butter Rum Bundtlettes

Coconut indeed! Organic, cold-pressed, unrefined coconut oil, pure coconut milk, and a splash of coconut rum (along with plenty of dark rum) make this a moist, rich and aromatic cake. Then dressed in a mascarpone, cream of coconut and dark rum icing, and topped w/ organic coconut flakes, this cake is simply mouthfuls of sweet and creamy, crunchy coconut-y-ness. Truly a coconut lover’s delight.
